Welcome to my blog! I’m Erin. I eat 100% gluten-free because of celiac disease. I also eat mostly dairy-free. I am a mom of 2 boys – my 4-year-old and my baby who was born in March. I have a bachelor’s degree in food science and am currently working on my master’s degree in nutrition. I love cooking family-friendly food for my loved ones!
Here you’ll see a collection of my favorite recipes. I focus my diet on whole, unprocessed foods, including lots of vegetables, fruits, healthy fats, properly prepared legumes, a moderate amount of whole grains, and high quality meats. In a world with so many conflicting views on nutrition, I think it is about finding what works for your body. This is what works for mine. I’ve worked over the past few years to make gradual changes in the right direction, such as choosing real foods over processed foods, to create a lasting lifestyle change.
I try and avoid refined sugar as much as possible on a daily basis, so many of my baked goods are refined-sugar-free and made from nutritious ingredients. Since I have celiac disease and can never eat gluten, I also like to recreate treats for special occasions that taste like the kind I remember from growing up. Having an occasional delicious treat makes my gluten-free diet sustainable. For me, it’s all about the balance between living a healthy life so I have the health and energy I want, yet not feeling deprived.
I hope to bring delicious food and treats into your kitchen! I have a Grain-Free Flour Blend that I love to use in baked goods. It gives baked goods an amazing texture without that chalky, rice-flour taste that so many gluten-free baked goods have. It is also higher in fiber, protein, and nutrients that other gluten-free blends, making these indulgences a little healthier.
