Happy New Year Everyone! I hope you’ve had happy holidays. Thanks for reading my blog this year! Blogging has been such a fun way to share my what’s happening in my kitchen. Being able to share has really made eating gluten-free enjoyable!

I have come a long way since going gluten-free after receiving the diagnosis of celiac disease in 2012. I am continuing to learn what a truly healthy diet is and have been making small and steady improvements in my daily life. I have learned the wrong way to go gluten-free is to eat GF pancakes for breakfast, a sandwich on GF bread for lunch, and GF pasta for dinner! I try to focus my diet on whole, unprocessed foods, including lots of vegetables, fruits, healthy fats, properly prepared legumes, and high quality meats. Everybody’s body is different, but I feel much better when I closely watch and limit my grain and sugar intake. I still eat grains, but just try to focus my diet on the other more nutrient dense food groups. I went dairy-free this September after having some food allergy testing done. Going completely dairy-free back has helped me feel even better since going gluten-free!

9. The Best Chicken Fajitas – These fajitas continue to be one of our family’s favorites! They are easy to make and the marinade is to-die-for. Everyone always asks for the recipe!

8. Pumpkin Oatmeal Pancakes – Easy,  healthy, pancakes that are full of fall spices! Lightly sweet from applesauce and full of vitamin-rich pumpkin.

7. Easy, Dairy-Free Fudge – {Paleo} Fool-proof, dairy-free fudge that comes out perfect every time! Made with coconut milk, honey, and chocolate chips.

6. Chocolate Banana Avocado Milkshake – {Paleo} I make this frequently when I have a chocolate craving! It is totally satisfying and full of wholesome goodness. Everyone else seems to agree!

5. Carrot Zucchini Toddler Muffins – Lightly sweet, perfectly moist, and full of shredded carrots & zucchini! Kids and adults both love these – always with great reviews.

4. Sweet Potato Casserole with Pecan Praline Topping – This recipe has received nothing but rave reviews since I posted it. Smooth and creamy sweet potatoes with a crunchy, buttery topping. A family favorite made gluten-free!

3. Paleo Peppermint Patties – A  delicious and healthy spin on a classic candy! They continue to be a reader favorite.  I keep some of these in the freezer for emergencies!

2. Zucchini Muffins – {Paleo} One of the most popular recipes on my site to date! Moist grain-free zucchini muffins sweetened with bananas, honey, and cinnamon. Always with rave reviews!

1. Almond Flour Snickerdoodles – 2nd only in popularity to my Almond Flour Chocolate Chip Cookies from 2012, these cookies are truly delicious! One bite and you’ll see why they are the top recipe of 2013!
