IMG_3672 A few months ago, my best friend Jessica had the brilliant idea of turning my favorite Sweet Pork Recipe into tacos. Jessica is my Anne of Green Gables-style bosom friend. One of the million things we have in common, is that we both geek out over food. A few weeks ago I saw a greeting card that said “Sometimes, all you need is an old friend, a good chat, and a slightly expensive block of cheese.” Amen to that. Since her discovery, I have made these tacos many times. They have become one of my go-to’s when we have people over for dinner. Everyone loves a good taco bar with lots of different toppings. This recipe is definitely a crowd-pleaser! These tacos are bursting with flavor. The sweet pork, creamy avocado, vinegary pickled onions, and tangy feta make the perfect bite if you ask me. And all the colors make a lovely presentation! They are also really simple to make! I love meals where the hard part is over long before dinner. The “hard part” of these isn’t even that hard. You just brown some pork tenderloins coated in spices and put them in the slow-cooker for 4-6 hours. Then just shred and mix with the sauce. Done! IMG_3680 A question I get asked often is, “I’m having my ______ (friend, family member, etc.) who has to eat gluten-free over for dinner and I’m not sure what to make him/her. Any suggestions?” For people who don’t usually cook gluten-free,  but are for the night for a loved one (such a nice thing to do, btw!), I recommend Mexican food! Just swap out flour tortillas for corn tortillas. Rice, beans, meat, and favorite Mexican toppings are all naturally gluten-free. Plus Mexican food is great for a crowd! The only thing to be careful about is buying premade sauces like enchilada sauce, chiles in adobo, salsa verde, etc. Many pre-made sauces have gluten-containing ingredients, so be sure to check the labels. These tacos are one of our favorites for a reason. When it comes to Mexican food, we also totally love these faijtas. Just add Spanish rice, chips/pico, something bubbly and you’re set! IMG_3687  

Slow-Cooker Sweet Pork Tacos with Black Beans {Gluten-Free}

Ingredients

    For the Pork:
  • 2 pounds of pork tenderloin
  • 2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon cinnamon
  • 2 tablespoons olive oil
  • 1/2 cup water
  • 1 cup brown sugar, not packed – just a loose 1 cup (or coconut palm sugar)
  • 2 tablespoons chopped garlic
  • 1 tablespoon Tabasco sauce
  • For the Pickled Onions (optional):
  • 1/2 a red onion, very thinly sliced
  • 1/4 cup red wine vinegar
  • 1 tablespoon sugar
  • 1 1/2 teaspoons salt
  • 1/2 cup water
  • For the Beans:
  • 1 15oz can black beans
  • 2 cups chicken broth/stock
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • For the Tacos:
  • Warm corn tortillas
  • Avocado
  • Feta or Queso Fresco Cheese
  • Shredded lettuce

Instructions

    For the Pork:
  1. Combine the salt, pepper, cumin, chili powder, and cinnamon in a small bowl.
  2. Rub the spice mixture evenly over the pork tenderloins. Heat the oil over medium high heat in a large skillet. Add the pork and brown on all sides, 4-5 minutes per side.
  3. Transfer the pork to the slow cooker. Add the water, brown sugar, garlic, and hot sauce. Combine and cook on low for 4-6 hours.
  4. Shred the meat before serving and mix with the sauce.
  5. For the Pickled Onions:
  6. Combine the vinegar, sugar, salt, and water in a small bowl and stir until dissolved. Add the onions and let sit at room temperature for at least 30 minutes and up to 4 hours. Drain onions before serving. Chill leftovers in the fridge for up to 2 weeks.
  7. For the Beans:
  8. About 30 minutes before you eat, drain and rinse the beans. Add to a small saucepan with the remaining ingredients. Simmer for 20-25 minutes. Drain the beans before serving.
  9. For the Tacos:
  10. Place a corn tortilla on a plate. Top with some of the pork, black beans, lettuce, avocado, a sprinkle of feta, and a few pickled onions. Enjoy!

Notes

*I like to put all the components of these tacos in different bowls on the table and let people build whatever combinations they like!
